Salmon a la Marsala

Ingredients

2 large salmon fillets
1 small leek
1 cup of single cream (or yogurt)
1 cup of pizza tomato sauce
1 small glass of marsala wine
1 small glass of white wine
12 halves of cherry tomatoes
1 tablespoon fresh sage
½ tablespoons of olive oil
Salt and pepper to taste.

Slice the leek and put in a baking dish with the olive oil. Cover the dish with foil and place in the oven for a couple of minutes or until the leeks are gently fried and golden.

Place the salmon fillets in the dish side by side and place in the oven for 2-3 minutes to fry with the leeks.

Blend together the cream, tomato sauce, marsala wine and white wine, add salt and pepper to taste and pour over the salmon fillets. Add the cherry tomatoes, cover the dish with foil and place in the oven.

Cooking time is difficult to predict but assuming an oven temperature of around 300°c, after approximately 20 minutes remove the tin foil and check if the fish and sauce are cooked. If necessary re-cover the dish, continue cooking and check regularly.
